2 racks of baby back ribs (or St. Louis-style ribs)
¼ cup yellow mustard (binder)
½ cup BBQ rub (store-bought or homemade)
½ cup apple cider vinegar (for spritzing)
½ cup butter (cut into pats)
½ cup brown sugar
½ cup honey
1 cup BBQ sauce (your favorite brand)
Prep the Ribs:
Remove the membrane from the back of the ribs for tenderness.
Rub a thin layer of mustard on both sides (helps the rub stick).
Generously season with your BBQ rub.
Smoke the Ribs (3-2-1 Method):
Preheat your smoker to 225°F using hickory, apple, or cherry wood.
Smoke for 3 hours, spritzing with apple cider vinegar every 45 minutes.
Wrap & Tenderize:
Lay out heavy-duty foil, add butter, brown sugar, and honey.
Place ribs meat-side down on top, wrap tightly, and cook for another 2 hours.
Sauce & Finish:
Unwrap the ribs, brush them generously with BBQ sauce.
Place back on the smoker (unwrapped) for 1 more hour to caramelize.
Serve & Enjoy:
Let them rest for 10 minutes, slice, and serve with extra sauce!
