Philly cheesesteaks
Ingredients (Serves 4):

1 lb ribeye steak (or skirt steak), thinly sliced

1 tbsp vegetable oil

1 medium onion, thinly sliced

1 green bell pepper, thinly sliced (optional)

1 cup mushrooms, sliced (optional)

4 hoagie rolls

8 slices provolone cheese (or Cheez Whiz or American cheese)

2 tbsp unsalted butter

Salt & pepper, to taste

1 tsp garlic powder
Instructions:

Prep the Steak:

Freeze the steak for about 30 minutes to make slicing easier. Then, slice it as thinly as possible against the grain.

Cook the Veggies:

Heat oil in a large skillet over medium-high heat.

Add onions (plus bell peppers and mushrooms if using). Sauté until soft and caramelized, about 5-7 minutes. Remove from pan.

Cook the Steak:

In the same skillet, add a little more oil if needed.

Cook the thinly sliced steak over high heat, seasoning with salt, pepper, and garlic powder.

Use a spatula to break it up as it cooks (like ground beef). Cook for 3-4 minutes until browned.

Lower the heat and return the veggies to the pan.
